Primavera Stuffed Tomato

Ingredients
  • 3 tablespoons Fleischmann's® Original-stick
  • 1/4 cup chopped onion
  • 1/4 cup dried tarragon leaves
  • 1 cup chicken broth
  • 1/2 cup long-grain white rice, uncooked
  • 1 cup frozen green peas, thawed
  • 1 can (4 oz drained wt each) sliced mushrooms, drained
  • 1/2 cup shredded carrots
  • 8 large ripe tomatoes
Directions
  1. Preheat oven 350°F. Melt Fleischmann's in medium saucepan over medium heat. Add onion and tarragon; cook 2 minutes, stirring frequently. Add chicken broth, increase heat to high. Bring to a boil.
  2. Stir in rice. Reduce heat to low, cover. Simmer 18 minutes or until rice is tender. Stir in peas, mushrooms, and carrots.
  3. Cut tops off tomatoes. Remove seeds and pulp from tomatoes, leaving 1/4-inch-thick shell. Discard tomato tops, pulp and seeds. Fill each shell with about 1/4 cup rice mixture. Place in 12x8-inch baking dish; cover with aluminum foil.
  4. Bake 30 minutes, or until tomatoes are tender and stuffing is heated through.
