- Preheat oven 350°F. Melt Fleischmann's in medium saucepan over medium heat. Add onion and tarragon; cook 2 minutes, stirring frequently. Add chicken broth, increase heat to high. Bring to a boil.
- Stir in rice. Reduce heat to low, cover. Simmer 18 minutes or until rice is tender. Stir in peas, mushrooms, and carrots.
- Cut tops off tomatoes. Remove seeds and pulp from tomatoes, leaving 1/4-inch-thick shell. Discard tomato tops, pulp and seeds. Fill each shell with about 1/4 cup rice mixture. Place in 12x8-inch baking dish; cover with aluminum foil.
- Bake 30 minutes, or until tomatoes are tender and stuffing is heated through.
