No-Fuss Tortilla Soup

Chef Art Smith and Dre from ConAgra Foods® Kids Café after-school nutrition program show how to make tomato-based tortilla soup. The Kids Café program was established to provide a safe haven where kids can get nourishing meals and learn about the importance of nutrition. For the soup, use one can of ready-to-serve chicken noodle soup. Add one can of RO*TEL® Original Diced Tomatoes & Green Chilies, undrained. Heat for six minutes over medium heat. Crunch tortilla chips in the bottom of a bowl and ladle the soup over them. Sprinkle soup with cheddar cheese.

Ingredients


1 can (18.6 oz each) ready-to-serve chicken noodle soup
1 can (10 oz each) Ro*Tel Original Diced Tomatoes & Green Chilies, undrained
1 cup coarsely broken tortilla chips
1/2 cup shredded Cheddar cheese (1/2 cup = 2 oz)
